Organic wines are one of the hottest trends in restaurants today, according to a report last week from the National Restaurant Association. But what is the difference between traditional winemaking practices, and organic practices?

Conventional wine means that the winemakers us an industrialized agricultural system characterized by mechanization, monocultures, and the use of synthetic inputs such as chemical fertilizers and pesticides, with an emphasis on maximizing productivity and profitability.

Organic winemaking is a type of agricultural process that promotes the use of renewable resources and management of biological cycles to enhance biological diversity, without the use of genetically modified organisms, or synthetic pesticides, herbicides, or fertilizers. Organic production is a system that integrates "cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity. At its most basic level, organic wine is made from grapes that have been grown without the use of chemical fertilizers, pesticides, fungicides and herbicides.

The relationship between wine and food goes back a long way and there are long standing traditions governing the pairing of certain wines with certain foods. Taste buds can detect food and liquid that is bitter, salty or sweet, without a problem. There are still a few wine snobs that will turn up their noses at inexpensive wines, but more and more wine drinkers are starting to realize that there are a lot of good inexpensive wines on the market today. Sure there are still a few people who remain naysayers, but you know better. And today value is almost as vital as taste when buying wine.

The fact is, that the lower priced bottles of wine have gotten a bad rap. And while the reputation started in the past, it still lingers today. But most people understand now that it is a pleasure to drink a glass that has a flavor that will rival those that cost much more. And they are not very hard to find if you know where to look.

And the best place is at a local winery if you have one. These small wineries take great pride in the product they produce. And even if you have to travel, it will be worth the trip. For starters you can in some instances buy a case of good wine for under 50 dollars. Plus visiting these places is a great way to spend the day while supporting your community. Try to go on a day when they have taste testing for an even better experience.

A large number of people would be happy drinking every beverage they consume out of the same glass and not worry about the many different shapes and sizes available. Not many people think that a drink can't be changed very much by what it is drunk from? Interestingly they can, so lets take a look at some of the more common glass shapes and how they came to be this design.

Whisky Glasses. There is a very good reason why people consume whisky from large-diameter glasses rather than the tall thin variety. Because whiskey is often consumed ‘straight’ and not diluted with a mixer (although it can be), the volume of a serving is often quite small. What this means is that if it were served in a tall thin glass with ice, the ice would have to be stacked up and only a small amount would be in contact with the whiskey. As ice is necessary to chill the whisky and release its deeper flavors, it’s best to serve the drink in a wide shallow glass where the ice can move around and have more contact area with the liquid, thus chilling the whiskey more.
